Recipe of the Day: Chicken Cutlets w/ Lemon Basil Sauce

I forgot all about this lovely recipe!  It’s one of my fave ways to make chicken, but I tend to be too lazy to make it after work.  Definitely a weekend meal for me!  SO yummy though!  You can either double the sauce recipe for using with mashed potatoes and corn, or to toss pasta with.  I don’t think you can go wrong either way!

SERVES 5

Ingredients
1 lb chicken cutlet
1 1/2 cups Italian breadcrumbs
1/4 cup lemon juice, bottled
2 large eggs
1/2 cup milk
1 TBSP basil
4 TBSP butter
1/4 TSP salt
2 TBSP complete seasoning               

Directions

  1. Rinse Cutlets (if you have regular chicken breast, make sure you cut them into cutlets) and pat dry.
  2. Season both sides of cutlets with complete seasoning.  Set aside.
  3. Mix eggs and milk and put breading in separate plate.
  4. Put cutlets into milk mixture and bread them so they are fully coated.
  5. Heat up canola oil or you can use butter in a skillet on medium heat.
  6. Put cutlets in the skillet and let them start cooking.
  7. In a small pot, mix the butter, lemon, salt, and basil until completed melted.  Keep on low setting.
  8. When chicken is golden brown, remove and pour an adequate amount of lemon-basil sauce over them.

Yours truly!  I’m super excited too!  I can’t WAIT to use my new goodies!  Unfortunately, I didn’t take pics, but I’m going to try to tomorrow.  I’ll try to post swatches too.  I was able to get Kylie instead of another Harley, so I’m very thankful to Zoya for that.  

I must say, the customer service I’ve received as just a contest winner has me extremely happy!  I wasn’t even supposed to receive my package for three weeks, and it wasn’t even two weeks!  Hello speedy shipping!  I’m definitely willing to drop some $$$ on polish with Zoya.  Not to mention, I really want to try their polish remove (Remove+) as I’ve heard wonderful things about it.

I still need to do my polish exchange, which I’m hoping to finally do by the end of the month.  They have such a huge selection of colors, and I need to build my Zoya collection… It’s hard with over 300 colors to pick from LOL!  I need to get colors I don’t have an abundant supply of those.  I have  A LOT of reds and pinks, but not as many corals, blues and greens.  

Anywho!  I’ll try to get some pics up tomorrow.  I just wanted to share my excitement with you all :D

GD IT! I lost it all!

I was trying to reorganize my bookmarks, and was finished.  Then, apparently for some stupid ass reason, I decided to delete my “Recently added” list… Google Chrome should offer a damned warning there!  I didn’t know deleting the list would thereby delete MY ENTIRE LIST OF BOOKMARKS!

I’ve lost everything!  You’re talking probably almost 100 bookmarks GONE!  A lot of those links I happened on by accident, and some I seriously needed… So, now I have to spend goodness knows how much time remembering everything I had and finding the links all over again.

I’m seriously pissed!  I’m partially pissed at myself for letting it even happen, but I’m even more pissed that Google doesn’t throw up a warning letting you know deleting the entire list causes you to lose ALL of your bookmarks!  And there’s no way to recover them either!  I’ve long since deleted Firefox from my PC, and that was the only place I could’ve imported from.  GD IT!
